Fruit and Oat Slice
A really simple recipe great for morning tea or as a lunch box snack. Can be made without nuts for those who need it.
1½ cups of grated apple (1 large apple or two small grated)
½ cup or 50g dried mixed fruit
⅓ cup or 25g pumpkin seeds
¾ cup or 50g mixed nuts (could add some more mixed fruit and seeds if wanting nut free) Kibbled Rye and Wheat are also good nutty alternatives
¾ cup or 70g rolled oats
¾ cup or 85g self raising wholemeal flour
⅓ cup or 25g desiccated coconut
½ cup or 50g oat bran
1 cup or 50g stoned chopped dates
90ml fruit juice (apple/cranberry/pineapple)
50ml oil (olive or similar)
Preheat oven to 180 degrees.
Mix all ingredients using mixer.
Place in tin and press into buttered/lined square tin. (7in sq tin/ would also prob work in bread tin)`
Bake at 150 degrees for 30mins.
When still slightly warm cut into desired slices
