Rachael's Fluffy Pancake Recipe

Ingredients:

2¼ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

2 cups whole milk

4 large eggs, separated into yolks and whites


Instructions:

Separate eggs into yolks and whites into two separate bowls

Mix dry ingredients; flour, baking powder, and salt in large bowl

Add milk to the bowl with the egg yolks and whisk

Add the mixture to dry ingredients

Beat egg whites in a separate bowl until soft peaks form

Gently fold in egg whites to your batter mixture with a spatula


Heat nonstick pan over medium heat

Add a little oil or butter.

Add a ladle full of the mixture to the hot pan and cook pancakes until bottoms are brown, approx 3 minutes.


Using a spatula, turn pancakes over and cook on the other side for approx 2 mins


Serve with yummy toppings. You can also add blueberries to mixture or banana for a fruity twist.
