Cacao Cashew Chia Balls



Ingredients:

1/3 cup cacao powder

1/3 cup coconut oil

1 cup pitted fresh dates

1 cup cashew nuts

½ cup shredded coconut

2 tablespoons chia seeds


Instructions:

In a heatproof bowl, place dates & cashews.

Pour boiling water on top & leave to soak for 15 mins

When softened add to food processor and blitz till smooth

Then add remaining ingredients and blitz until fully mixed.

If the mixture is very dry add a bit more coconut oil.

Let it sit for 10 minutes. Roll mixture into bite-size balls, then roll in shredded coconut.


Can be frozen for up to 3 months.
